My version of Pret's "Superfood" Salad

Anyone ever paid £4.50 for the super yummy & healthy superfood salad from Pret a Manger?

Here are the ingredients I used to replicate it:

- Raw spinach leaves

- Quinoa

- Houmus

- Roasted red pepper

- Cooked beetroot

- Cherry tomatoes

- Cucumber

- Lemon

- French dressing

Yummy!

Great idea Lora, I will swing by a Pret on my way home just to have a glimpse of the final look and then go home to make my own!

But, I already know that cooking tasty Quinoa can be a challenge on its own! Because it is not very exciting without seasoning. I like to use some home made (or the low salt powder version) Bouillon and boil it down instead of draining it after - if you know what I mean? Quinoa also goes well with nutmeg or paprika, I think.

Anyway, thank you again for the inspiration!
