This is chef's latest creation: it's a Thai-style green papaya salad with extra green leaves, walnuts, and the dressing on the side. We grow the papaya and salad leaves ourselves. It's nice

No idea I imagine not a lot of anything much. When I'm mooching free food at the restaurant, I tend to eat one of those with something more substantial. Our business ethos is to just deliver unfussy, tasty food that isn't expensive and is good for you (or at least doesn't give you cancer), so we don't get too hung up on the macros.
If you're in the UK, it is pretty tough getting good salad ingredients ... and virtually impossible where we are. That's why we just grow our own. I can recommend that to anyone - apart from the freshness and convenience, you can grow a much more interesting range of stuff than you'll see in the supermarket.
So true. I grew beans and courgettes this year, and a few tomatoes but they didn't ripen very well. Aim for next year is to get more salad going. Your restaurant sounds lovely! Are you near London?

Top tip from my mum re. tomatoes : grow them near a wall that gets a lot of daytime sun. The stored heat helps them along, so you're more likely to get ripe tomatoes before summer ends. Failing that, make chutney with the green ones.
