GF Flours?

I have tried to be gluten free on and off for years and I know my inside feels so much better when I am Gf. But I tried the GF breads and I have just tried making the sweet potato muffins from the Gwyneth Paltrow book which contains the GF flour. Now I am suffering stomach cramps etc. Is it something in the flour or is it something else I have a problem with?

Maybe the flour contains Xanthan gum? some people do not tolerate it

Thanks Vinny,I looked xanthan gum up and didn't like the sound of it. Seems this might be the culprit.
