What do you all eat.....

Hiya

Ok, after posting yesterday I'm thinking that maybe I can overcome my issues with my diagnosis here with you all.

I have a diagnosis of coeliac disease but haven't really been sticking to my diet,at the time of my biopsy I had complete villious atrophy.

So what I want to ask you is ....

What bread do you eat or cobs?

What are your favourite snack foods?

What gravy do you use?

How do you stop the crazy weight gain once you are fully gluten free?

And if anyone wants to give me ideas for lunch times, I am a stay at some mum but I'm terrible at cooking,that's my husband's job in our house!

My consultant told me to eat 2 tablespoons of rice each lunch time

Hi Roo! A few examples for you - I love the GF pasta with tuna and homemade tomato sauce for dinner or even lunch. I use Sainsbury's for F-F bread and I love the Tru-free pretzels - very yummy. I usually take a salad for lunch to work - tomatoes, cucumber, sweetcorn, onions or spring onions, herb leaves, cheese smothered in Light Mayo usually with cold chix or tuna! I am a brilliant baker (I do commissions at Christmas!) and am having to learn to bake using all the GF flours - takes a bit of practice but am getting there.

Join Coeliac Uk and you will get a food directory - mine is in my handbag to take to the shops - its a pain looking at everything tho. Baxters Soups do a few soups which are GF and carry the Cross-Grain symbol.

Lots of fruit and veg. No gravy - I just whizz up some tinned tomatoes with herbs for my gravy.

If you have just been diagnosed, suggest you join CoeliacUK who will send you their food guide which lists all the foods available (including ready meals) in the supermarkets. Also fill in the Glutafin , DS and Juvela questionnaires and they will willingly send you a box full of samples for you to try to see what you like. There are some really good rolls and breads now but they depend on your personal tastes. Also pizza bases available in most supermarkets (in the freezer section) I really missed Black Pudding with my full english when we had one but I tracked down a butchers in Edinburgh that makes it! Tell us what you like eating and I am sure we can point you in the right direction!

Hi roobiedoobie, The best thing for you to do perhaps is to think about the foods that you most enjoy then look at what is available as a gluten free person. I try to stick to mainly natural foods - foods that haven't been tampered with - as near to off the tree and out of the ground as possible - but we are all different.

Many people who use GFG have websites or blogs with tried and tested recipes that are worth taking a look at if you want to try something else or perhaps cook some of your own bread, cakes or biscuits. Check out this lovely site:

And here is a really good site that lists masses of gluten free websites and blog links - it is probably best to bookmark the main site as there are tips in creating a paleo diet and honing your own personal diet to suit your needs etc:

Short grain brown rice has a lovely nutty flavour and it absorbs the air that gets trapped in the intestines... you can incorporate it into a salad with a dressings, have as a kedgeree etc etc

some people react to rice as well so check this out before following the advice of your doctor....

In a typical day I might eat the following things

breakfast berries and fruit with Greek yogurt and honey

snack mixed nuts

lunch chicken with lots of salad and olive oil dressing

snack protein shake (gluten free) and apple slices with cinnamon

dinner steak with boiled sweet potato and veggies (butter on mash not gravy)

snack one slice of gluten free bread toasted (Sainsbury's gf sandwich bread) with melted cheese.

I am into healthy eating and fitness so do burn off the calories. I don't eat low fat things as they have additives and often wheat starch added. I avoid most free from foods as they contain a lot of soya and it affects me badly. Hope this helps. I carry fruit/nuts/seeds/gf protein bars with me as a snack in case there is nothing to eat when I go out anywhere.

I too am a Greek yoghurt fan - the full fat variety - I envy you for your ability to eat salad. I cannot digest it .... love the idea of the cheese on toast - you have now officially made me feel hungry! Lol :)

Thank you all for your replies.

I'm going to take on board everything you have all said,I've started today with a slice of genius brown bread toasted and a muller fat free yogurt,I'm off to hospital to see the dietician so I might have a jacket potato when I get there,my friend works in the cafe so she knows how to sort my food out.

how about pizza slices for lunch? DS do some good ones but I make my own with Juvela bases. reply to this if you want some tips, I do a mean pasata . make 2 at a time, halve each, freeze 3 for another time. uses up all the fridge bits and no cooking skills required

Hi. It is a headache trying to work it all out but actually there are some naturally gluten free foods as well as the 'free from' one specially made for sufferers.

Hi everyone.

without changing the subject,

Does everyone miss out on gravy because of the problem with mixes?I make proper gravy with meat juices, add a couple of teaspoons of GF flour then vegetable water or stock. bring to the boil and sorted. all over my fresh meat veg and potato type meals.keeps in the fridge for a day or 2.

was just wondering.

Noticed an Anthony Worrol-Thompson GF instant gravy in Sainsbury. I've not tried it though, as I tend to make my own too.

Knorr stock cubes are fine and so is bistobest in the jars

I use Free & Easy Gluten Free Vegetable gravy which i buy from Tescos its lovely in fact my whole family use it and they havent noticed that its not there normal one!

As far as gravy goes..we used to have normal bisto reduced salt. I tried bisto best beef but it was very smoky tasting I tried the lamb one and it is lovely we had the lamb gravy with beef last night and it didn't seem out of place it was really nice we just made it with beef stock cube and the juices from the roast beef xx

A quick tip with the gravy...if you have any left over let it cool then freeze in an ice cube tray. That way its ready to reheat any time you need a little and can't be bothered to cook a full pan full of gravy

Hey Im totally here with you on this one, have a look at my post I put on a second ago. I always use Bisto Best gravy it comes in a glass jar and in lots of varities. x

I tend to eat naturally GF foods, fruit, veg, meat, fish, eggs, cheese, greek yougurt, homemade meringues, rice, gf pasta homemade, curries, stir frys, I don't eat much gf bread as I don't like any of them so I get most of my carbs from lentils, buckwheat, gf pasta and noodles, rice and my rarely made homemade pizzas. I dont buy anything from the free from aisle apart from Soy Sauce as I really struggle with my weight and the calories and fat in most things are horrific not to mention the price. Basically I make natural GF meals and snacks so everyone can eat the same things. A typical day for us would be

Breakfast: greek yogurt and fruit and coffee

Snack: carrot sticks with homemade tomato salsa

Lunch: veg soup followed by a mixed salad with chicken or mackerel or tuna with a tomato and onion salad.

Afternoon Snack: handful of nuts, or if I am being very indulgent coffee with a meringue

Dinner. Lamb and spinach curry with brown rice, fruit salad with yogurt

Evening Snack: small portion of homemade popcorn
