Hi fellow guerrillas, I was diagnosed recently with wheat/glucose intolerance..had been following a gluten free diet for a while to determine if would help me...surprise surprise after only 2 months the difference was dramatic!...1st and most important, no rushing to the loo shortly after eating, and being sick!, no alternating bouts of diarrhoea/constipation..no violent stomach cramps...and oddly or not, no leg/feet cramps at night? also headaches ceased, blah blah I am sure you are only too aware.
Anyway I have discovered cooking!! gasps! lol...Yes I know its what my grandmother did, and indeed taught me many moons ago....No buying ready meals for her, everything including bread was made and cooked on the kitchen range, only raw ingredients purchased. I remember the range/Aga was on 24/7....So I have made one of what I thought was one of my fav dishes ...Chicken Kiev...made with fresh chicken breast ( not re constituted chicken )...and GF breadcrumbs WOW!!! delicious even hubby loves it and he was never a fan of the pre packaged ones I used to buy. Real homemade chips/saute potatoes...OMG! now this is TRULY one of my fav dishes so good and all GF too. I have made lovely pies, pastrys, and GF cakes...Roasted mixed peppers, sweet potatoes & red onion. and garlic with grilled GF Sausages Yummy! So lessons learnt are that home cooking really does not take that long and is no more expensive than ready meals and tastes SO much better...Seems there is a GF substitute for just about everything so 2012 looks like being a very healthy ( eating) year for me and mine.

Hurray! I'm glad you've found yourself so dramatically improved after going GF- I'm finding it such a relief too. It's fantastic that you've learnt to love cooking too; I think it's so much easier if you've got the confidence to give it a go and make things from scratch.
I think I might have to try and find a recipe for GF chicken kiev now you've put the idea into my head!
Lol it's simple I get 3 bowls GF plain flour in 1st beaten egg in 2 nd and GF breadcrumbs in 3rd slit a pocket in chicken breast and stuff with garlic butter and herbs secure the opening together with cocktail sticks. Dip each breast first in the flour to cost then into the beaten egg then roll in breadcrumbs then back in the egg and once more in th breadcrumbs. Place on a baking tray and cook for around 30 mins at 200c x x
Great to hear that Romany! So far coeliacs fear what they'll eat when diagnosed yet in the long run CD may have some positives - we switch from fast food/ processed foods and actually eat many foods in their natural states.
