Anyone knows why Zita West publishes recipes with tapioca flour? It’s a high Glycemic index flour apparently. Wondering what’s the rational?

Presumably for people avoiding gluten? Also I heard when you bake with it you can use less fat than you would with other flours.

There are other gluten free options with lower GI index, that’s what I find strange
