I have type 2 diabetes and i’m trying to find an alternative to potatoes to eat. I tried sweet potatoes but I really don’t like them.

Over Christmas I had some parsnips and I can enjoy eating those. However I was dismayed to find out that parsnips have a high G index. Should I avoid them ?

I have prediabetes but am trying to eat the right food to ensure it doesn't progress. As I am only recently diagnosed it is proving difficult to replace foods like potatoes. I know that most vegetables are fine to eat but am still trying to come to terms with restricting the foods I formerly enjoyed. I'm beginning to find it is easier to follow low carb recipes which cut out the need to try and find alternatives. There are also many good books available which are helpful. There is lots of excellent information on DiabetesUK. I wish you good luck in your quest. It is difficult but we have to do it to enjoy a reasonable and healthier life.

If the parsnips are making your blood sugars go higher, have you tried cauliflower instead?

As Activity2004 - cauliflower is the usual vegetable substituted for staples like potatoe, rice and pasta.

Small new boiled potatoes have a lower GI rating. I try to stick to those but not at Xmas 😂🤣

Have you tried baked beetroot wedges? They are a tasty change.

As a rule - vegetables that grow below the ground should be avoided - they are starchy (and starch breaks down in the body into sugar)

And I am from Ireland and potatoes and Ireland are ................... synonymous
