I'd like to share my recent observation on the impact of Emmer wheat and Durum wheat on my body.
I have been having my usual one Emmer wheat chapati with carrot subzi for dinner for some days and observed my PP in the range of 170 mg/dL( next day FBS between 117 to 120 mg/dL). I had stomach full of organic durum wheat pasta(with vegetables such as carrots, beans, peas) yesterday and found my PP to be 127 mg/dL(today's FBS was 104 mg/dL).
The above tests were quite surprising as both type of wheat I tried are of low glycemic index.
Can any one guess the reason for this observation?
