My breakfast today morning !

This accomopanies with a half cup of Green Chutney made out of Coriander leaves, Pudina Mint , Ginger, Garlic ,a dash of lemon juice,!

Looking good, what are the carb, fat, protein and calories?

No calori count , No carb count....That is the beauty of my diet ....no worry....

I keep grazing for the whole day....every 2-3 hours ... Something or other except

1. No added Fat or oil though the plant food will have some fat in it.

During Lunch, I do take 1 table spoonful of Flax seeds or chia seeds and 4-6 nos of Wal nuts halves which contain the essential fats i.e ALA & LA ( which our body can not make). All Other Fats are Non-essential Fats which we don't need to eat as our body is capable of making.

2. No Animal protein , No animal Fat

3. No Dairy

4. No processed food

5. No out side market foods

My Lunch today !

1 large Cup Dal Rice topped with 1 table-spoonful Flax seed Powder.

Tofu with spinach & oyster mushroom.

1 mix veg curry

1 boiled & cooled porato

1 piece carrot / 1- cucumber

1 whole kiwi , orange

Lettuce , celery

Are soaked walnuts better or unsoaked? Can we also eat pistachios (without salt), any benefit or problems with it in reference to diabetics?

Good question ! (1) Walnuts contain valuable and Healthy Fats called essential fatty acids (EFA) such as ALA ( Alpha Linolenic Acid) also known as omega 3 fatty acids. It also contains LA ( Linoleic Acid) known as omega 6 fatty acid.. Both are essential for human body , since human can not make these fats and so they need to get this from dietary sources.

However, they contain some anti- nutrients such as phytic acid and phytates. These anti nutrients can be broken down / destroyed either by soaking or cooking. Walnuts are not cooked..therefore it should be soaked in water for at least 12 hours before consumption. All grains, Legumes, seeds &nuts and so soaking or cooking or both are required to destroy phytic acid

However please remember these are high calori fats...so eat in moderation within limits. But it can be taken daily to get your daily needs of essential fats.

(2) Pistachio has also only essential fatty acid mainly LA , but no ALA.

Though pistachio can also be taken, but between walnut and pista , I would prefer walnuts..since walnut have both the EFA in the ratio of

Omega 6 : omega 3 = 4:1

The other edibles which have both ALA & LA i.e. omega 3 & omega 6...are Flax seed & chia seed.
