Yes,everyone may consume long wheat.It is ancient kind of wheat which has not been modified by human research.

Yes,in general modern wheat can be replaced by long wheat( Emmer wheat) which is one of the most ancient varieties of wheat that has not undergone any modications. It is reported to have more nutrients than the modern wheat.
Having said that you should take care of the total amount of carbohydrate consumption as suggested by Hidden above.
Are these the weight of grains or the Starch/Glucose given out to body?
