From Tennessee and saw a post that was of interest trying to understand different grains in bread. A cancer patient of three years and learning to avoid unhealthy sugars. I was looking up a wheat I was unfamiliar with listed in the Bible in which they used to make bread. Emmer wheat. Comparing to ferro, availability or substitute and value

Welcome to the group, csglobun . Are you on a gluten free diet? Are you a type 1, 2 or LADA (1.5) diabetic? Some diabetics also have gluten issues/can be sensitive to gluten/wheat.
