Hung curd

I've observed some members include hung curd in the recommended meals which I was wondering are there any specific reasons. Is this food more suitable than plain yoghurt (full cream) for diabetics? I've attached a photo of my freshly made hung curd. By the way, I call it 'labneh' and I believe they are the same, aren't they?

First time I am hearing about "hung curd". I know yogurt, which is the other name for what we call curd.

My wife makes excellent thick curds at home, from regular Mother dairy milk. She carefully removes the top layer of cream. We have been consuming the curd as a necessary part of lunch and dinner, for years.

Curd is nutritious and very easy to digest.

Hung curd can be made easily at home by putting normal home made curd on a clean muslin cloth and tying it tightly ,keep it hanging till all the liquid has drained, milk sugar drains out with the liquid ,hence the curd becomes more suitable for consumption by a diabetic :)

I firstly heard this hung curd from this forum too. You should ask your wife to make it as it's more suitable for diabetics. It's easy to make as explained by osho1410 along this thread.

Yogurt and curd are not the same. Yogurt is better than curd. The only difference between the two is microorganisms added to the milk. I make yogurd ( yogurt +curd).

Please don't remove top layer cream. Also use full fat milk.

A little sour curd / yogurt is good because it there is very little sugar. Hanging curd removes whey sugar as said by shri and osho.

In this photo is not hung curd then as I made it from homemade yogurt which hung up on the muslin cloth overnight. As I said before I call this 'labneh' (basically strained yogurt). How do you make curd? What do you do with the whey liquid?

That's hung curd. The difference between yogurt and curd is as i said different micro organisms used. The hung curd is akin to cheese. Many people in india use curd instead of lemon juice or vinegar to make cheese. Not rennet too.

I make curd / yogurt by adding homemade curd or yogurt to the lukewarm milk ( heat the milk and allow to cool ) and keep overnight in a warm place.it takes 6-8 hours. For yogurd i take equal parts of curd and yogurt to be added to the milk.

The whey liquid to be discarded or added to the buttermilk to be consumed by nonD. There may be many other uses but we the D people are not supposed to use the whey sugar.

Is paneer considered as curd?

No. The difference in making of paneer and cheese is that rennet is added to the later. But the people here call cheese "paneer "

Curd is made by adding fermentum to lukewarm milk. Whereas cheese and paneer are made by adding fermentum to the hot milk and separating whey on the spot. Curd is good for gut health because it contains live bacteria.

As whey is separated from the milk (full fat milk) while making hung curd you get good amount of fat, protein and other nutrients in the curd except lactose. Very little amount of lactose remains in the hung curd.

Thank you Osho1410 & Shrisamarth. Based on your replies, it's worth spending time hanging the yogurt/curd as it's much better/safer for diabetics than eating plain yogurt.
