After graduating again in the summer I’ve been happily going out 2/3 times a week for 30/40 mins. My issue is I don’t often get up to or over 5k, typically 4/4.5k. The key question is whether you want to. There’s no “should”! If you’re enjoying what you’re doing and it’s helping you stay fit and active, you don’t have to change anything.
If you did decide you wanted to extend the time you’re running for, the time based magic plan over on the Bridge to 10k board could be a good option. You don’t have to be aiming for 10k to post there. Like c25k, you’d gradually build up. The plan takes you to an hour’s running but you could stop increasing at any point-perhaps when you hit 5km covered.
Is there a particular reason you fancy running 5km? Perhaps that will help you decide whether to go for it. We’re here to cheer you on either way! You’re already doing brilliantly.

My advice would be to enjoy what you are doing without putting any pressure on yourself. Like you I have been running for 30-40 mins 2 or 3 times a week (I am in my late 60s) But, I have occasionally run longer and further on those few magical days when everything seems to align. But, these longer runs are not planned, it's more a question of me feeling comfortable (breathing and legs feeling ok) and deciding to run a slightly different route. I prefer running without any particular goal and just enjoy the fact that my ageing body can actually get out and do this.
you sound happy with the running you are doing. There are other ways to build fitness. Doing for example one or two Pilates or yoga sessions per week would help build core strength, balance and flexibility, all vital areas as we get older.
It's a dilemma when you see what others are doing and wonder what you might be capable of or you might enjoy if you tried it! BUT you are enjoying running just as you are. Sounds about right. When motivation changes ring the changes but nothing wrong with a comfortable routine that's doing you good!
