So after many failed attempts I have restarted the couch to 5k and am determined to see it to the bitter end. Just wondered if anyone else finds the second runs of the week the hardest too?

I think I often did! Just take it nice and slow - your run can be slower than your brisk walk. Maybe it was going too fast that lead to giving up? I follow the Japanese slow jogging movement (there’s a short film on youtube), this slow running technique was a major breakthrough for me. Perhaps try that - it’s low impact & injury free running is very important for me. Good luck!
