When we first had to stay at home because of the pandemic I decided I was going to declare a comfort food week. Nothing fancy just things I grew up eating. Today it started snowing so I am declaring the first comfort food week of 2021. I made Spanish rice and thawed out enough ground beef to make meatballs to have another night. I let the kids know what I am making and they are welcome to stop up and take some home or request a dish. I'm exhausted because my back has been quite sore today but it's a good kind of exhaustion. In a day or two I'll make a few more things.

Thanks. You made me smile because my sister and I learned how to make Spanish Rice when we were young. I know how to make another dish thats similar called fasoolia. I enjoy a variety of foods. Everyone has something to share and I like to eat lol. Although lately I 've been struggling with eating cuz of my depression yet also trying to lose weight. Thanks for the picture it warmed my heart. I think I'll make some Spanish rice this week. Take care. Very grateful . I am feeling some loneliness and love for all of my family and for people who are patiently waiting for me.
