Hi Eliza80! Someone will be able to give you much more detailed response than me.. but my understanding is that the ratio between HDL and LDL is also important when determining whether your cholesterol levels are good, bad, or ugly, as well as the overall figures.

My understanding is that excess carbs turn into light fluffy lipids (the fat molecules that attach to cholesterol) which are BAAAAD. However fat in food becomes high density lipids, those you want. Gary Taube has written Good Calories Bad Calories, which covers all this in A LOT of detail.
The short point is that the fat in beef for instance does not pass unchanged from your stomach to your artery walls to clog them up and kill you... which we are sometimes led yo believe. Yes to beef no to toast.
