That's a winner! I like the mint in the cauli rice but did he really leave the cauli stem out? It tastes exactly the same and wouldn't be recognised once it was 'riced'

Hard to tell, but I agree. I would never discard the stalk.

And since I discovered "cauliflower greens" I realised I was a fool binning the leaves.

He did use the stems, but I have to admit, I have never thought to, but will from now on :)

I had it for dinner yesterday. Used jungle curry paste, because that's what I had.

My mince looked high quality (Hereford from co-op), but it released a lot of water when I fried it. When I make it again, I might get mince from the butchers, and I will source Rendang powder.

Let me know how you get on.

This looks great, I shall save this and give it a go. Personally I think cauli rice is nicer fried in coconut oil rather than microwaved, but love the addition of mint :)

I think he was trying to keep things simple, hence the microwave.

There are questions in the comments asking how to make it without a microwave. You might be able to help out there!

PS. Because I mixed it with the curry, cooked in coconut milk, I doubt it would have tasted much different if I had fried the cauli rice.

But I shall keep it mind the next time I make cauliflower rice.

I fry mine too, I actually just dry fry it with a little garlic salt 😋

I always use coconut oil when using it with curry, but do it with olive oil if using it with anything else :)
