New way with butternut squash

fedupoffeelingtired profile image

Wanted something different with my salmon tonight. Had a squash in the fridge so decided to try making fries with it. Tossed cut pieces in olive oil salt and pepper and rosemary cooked in a hot oven...so tasty I'm hooked.

Butternut squash is one of my fave veg. I stuff mine with spicy minced beef.

Halve and deserted butternut squash, spray with low fat spray and sprinkle with chilli flakes. Roast in oven at 180° for around 40 minutes (or until soft) meanwhile, take 500g lean minced beef( or quorn if not a meat eater), onion, 1tps cumin powder, peppers and and mushrooms.

Brown meat and add all veg, when squash is cooked, scoop out flesh and add to meat mix, mix in well and then spoon into.the skins of the squash.put back in oven for 15 minutes. Its delish and very filling😊

That's a delightful meal. But I am puzzled: why would you include a mystery ingredient like "low fat spray"? You can bake a squash without fat, or apply how ever much oil you want with a brush. I don't see any need to pollute your excellent whole food recipe with artificial nonsense foods.

It's what I use!! Though I will more than likely swap to olive oil,I'm still a little indoctrinated in the slimming club's low fat versions are best. Although I have taken your advice and stopped the low fat yogurt and swapped for fromage frais, and the Fibre 1 bars, though, I don't like advocado!!!

I hadn't thought of oven-squash fries. I will emulate this.

I love this tip! I love squash, but hate peeling it.
