My body seems to love the weight I am now. I am walking on average 4 days a week for a good 6 miles. I do cardio via You Tube about 5 days a week for 30 mins . I am 5 ft 1 , 60 years old and weigh on average 63kg but rarely go below this even if I increase fitness , cut out alcohol etc . Normally I eat the same breakfast of porridge made with water , greek yog, fruit , cup of white coffee / no sugar then large fish or 150g cottage cheese salad then a 5-600 cal evening meal trying not to snack . If I make a real effort to really tweak anything I feel I can do without then the scales still register about the same ....puzzled and would welcome tips / advice please.

But to kick those last few pounds, maybe try some sort of fasting or calorie cycling. Eg skip breakfast or skip breakfast 2 or 3 times a week. Still have the coffee, but black if possible.
I can relate. I'm working on my last 5 pounds (95 done). I think this phase is achieved a few hard won ounces at a time, so I think there are two possibilities.
The food sounds great, but as Porridge is a carb, maybe ease up on the quantity or skip it the occasional day.
And 'trying not to snack' is likely to make or break this, so watch that final snack of the day and don't snack it?
You are so close, that could bring you across the line.

For what it's worth, maybe you could give the following a try:
Eat a carb free breakfast (i.e. ditch the porridge).
Make sure your fruit is low in sugar (raspberries and strawberries are the lowest).
Cut out all alcohol.
Shift your breakfast time later and later so it becomes a brunch. Have your main meal mid afternoon, eliminating an evening meal.
