I remember having similar experience back in my 20smth. Back then, I was varying between 58 and 64kilos (wish I had that issue now ). When I succeeded achieving 58 I was always hungry like my body tried to go back to 64.
I think our body needs time to adapt and that is just a phase and that it will pass. I managed to maintain target weight very shortly, but I blame unhealthy diets that helped me reach that weight but had no solution to maintain it...
I've gone through your posts, Jo and half of them, over a year, mention that you're hungry. I suggest you look at what you're eating, rather than how much you're eating. Natural fats are satiating, whereas high GI carbs/sugar can spike an insulin response, which may be followed by a crash, resulting in hunger. There's a lot of information about it, on the internet and you may want to acquaint yourself with it further, to find the correct balance for you
