Just to add a little to the discussion regarding artificial sweeteners I have just read an article on the subject where a scientific study had taken place on sucralose (Spenda).

It found that on some obese people who has not used it regularly before it can raise blood sugar and insulin. To quote

Bottom Line: Sucralose may raise blood sugar and insulin levels in people who do not consume artificial sweeteners regularly. However, it probably has no effect in people who regularly use artificial sweeteners.

Makes me feel a little better as I use it all the time although it was a small study.

Let's face it, the alternative for most of us is sugar. And that puts the sweetners ahead of the game for us. I do think our bodies are fooled by some sweetners into reacting as though we have eaten or drunk sugar when we haven't, but for me, that only makes it nearly as bad as sugar. I do try to sweeten with fruit or veg, when it is an option. Even jam has less sugar than sugar! But when sweetner is the best option, I go with sweetner. Hardly manage to use a 2lb bag per year, unless baking for others. I do use a wide range of sweetners, though my favourite is the powder because it is easier to use less. I do find a lot of sweetners are way too sweet, in the amounts they are packaged in.
