still struggling with working out calories, need a good book to show the way, most foods made from scratch. any one out there can point me in the right direction please.

Have you seen Myfitnesspal - it works out calories easily for you, you can input what you eat and also track your exercise and it will also ask you what weight loss goals you have, and work out how many calories you should be eating per day to achieve your personal weight loss goal. It's really good.
Also, there are lots of tips and strategies for weight loss on the NHS weight loss pages.

Google caloriecount. You can find the calorie count of anything, simply by typing the food in the search bar..
MyFitnessPal is excellent - a huge database of food and it works out the calories you should stay under to lose weight. If you have a smartphone it's a great free app too.
Don't eat the exercise calories you burn if you want to lose weight.
