I remember my childhood, I always had a little sweet potato for breakfast and off to school. It was uplifting, tasty and comforting at the same time, besides the fact that a potato has even more potassium than a banana which makes perfect start of the day. β€οΈ
Going into adult hood, I have incorporated many types of potatoes into my dishes and my favorite of all time is organic stokes purple sweet potatoes for many reasons:
1. Just like other potatoes are great sources of nutrients such as potassium, fiber, B vitaminsβ¦, purple potato has two to three times the amount of antioxidants comparing to other yellow or white potatoes due to anthocyanins (purple color indicator just like grapes.)
2. Purple potatoes have a Glycemic index of 77 which is lower than yellow potatoes 81, and white potatoes 93. They have high concentration of polyphenol plant compounds which may decrease the absorption of starches in the intestines, therefore minimizing purple potatoβs impact on blood sugar levels.
3. I love the unique taste of mildly sweet, almost wine-like when roasted and beautiful purple color that compliments my plate.

Today meal, I had roasted purple potato slices, 3 types mushrooms (King oyster, Shiitake, Maitake), broccoli, garlics, dried rosemary herb, red onion, fresh sage leaves all roasted in sesame seeds and oil.
It was simple, delicious and I enjoyed this combination a lot. ππ
