Tonight I had this lemon dhal it was so tasty.
I fried Onion , fresh Garlic & Ginger, diced yellow pepper and courgette
Added turmeric, black pepper, salt and cumin
Then I added the lentils and water to cover
I simmered it until the lentils were cooked and added spinach and a little grated coconut block. At the end I squeezed on the juice of half a lemon.
I love this, its healthy, simple and delicious π and you can cook it all in one pot π
