Low Fodmap Vegan cottage pie

Hi all

I tried out another new Vegan low fodmap recipe today. It had spring onion tops (only the green part) carrots, tinned lentils, sweet potatoes, tinned tomatoes, low fodmap stock (homemade), basil, smoked paprika, salt and pepper in the filling. In the recipe it says add Vegan butter to the mashed potatoes for the top but I just added Oat milk, salt and pepper. I use Pink Himalayan salt.

I wasnt sure what it would taste like but I thoroughly enjoyed it.πŸ˜‹

Thank you Ali, it was rather good.😊

Oowa, just seen this, it looks scrumptious Alicia, did you use dried basil? I've been using pink Himalayan salt too but someone said Portugese sea salt is even better, I can't find any. Just love your fodmap recipes, they taste good and are so easy on digestion. πŸ™‚

Hi zube-UK , yes I did use dried basil, I use some fresh herbs but run out of space in the freezer to store it all.😊

I've never seen the Portuguese salt but have to say I do like the Pink Himalayan salt I use.

Thank you, I have tried a few low fodmap recipes now and this one was delicious and easy to make.
