This evening we had spaghetti in a roasted butternut sauce. With roasted vegetables. It was delicious and very tasty. I wish I’d made more.
A lady whose garden we maintain gave us a small bottle of damson brandy. Whilst cooking the pasta I got preoccupied with trying the brandy and gave some to my neighbour to try. Then I realised I hadn’t added water to the pasta so the edges burnt. All was not lost as I snipped off the ends of the spaghetti with the scissors 😂
Lovely meal. We had apple crumble with apples from my neighbours tree for dessert 😋

Your meal looks fantastic, and I'm wondering how you make the Butternut squash sauce - as it sounds very yummy. Glad you were able to save your pasta, after the slight singeing. The damson brandy sounds really good as well.
Hi Zest. Thank you! I roasted the butternut squash and garlic. Then put them in my blender with a little dijon mustard, teaspoon of miso, black pepper,nutritional yeast and plant milk. I blended it and added more milk to get the thickness I wanted. It's really nice. Sometimes I also add a roasted onion.
Oh wow Ali I absolutely love the sound of your dinner. How did you make the sauce, I love butternut squash and have some lovely chickpea pasta and red lentil pastas that I'm sure would go very well with the sauce.

I roasted pumpkin last time instead of butternut squash. You can leave out chillies if you dont like them. It's a lovely sauce and filling 😋
