We had pasta tonight. I made a creamy sauce with cashews, Dijon mustard, nutritional yeast and chilli.
Then mixed cooked sweet corn, garlic mushrooms, spinach, butternut squash, salt and pepper into the sauce. It was simple and delicious. I took a photo but it’s disappeared, I can’t find it anywhere!lol 😀

I have a vitamix so no need to soak which is why I bought it as I know it was an extravagant expense. If you don’t mind me asking, can you not eat cashews? Ali
Ali, if I eat too many (and they are very irresistible and so I can hardly stop at just one or two) the fat in them causes arthritic reaction within around three hours.
Well that’s very interesting as I have a few minor problems which have popped up over the last few weeks and cut out gluten which made no difference (maybe I need to do it for longer) so I’m eating it again and now but in lesser quantities. I’m wondering after what you have said if it’s the nuts that’s the problem.
Ooh never mind the photo as with those ingredients I bet it was delicious - where's my portion lol😂😂
