I made this today. I had some cauliflower and wanted to make something different so gave this a go.
I boiled cauliflower, carrots and peas and put them into a white sauce I made which I added nutritional yeast, Dijon mustard and parsley.
I rolled the pastry out into a big circle and put the vegetables in the middle and wrapped up the sides. (I put turmeric and pepper in the pastry). You could use bought puff pastry too😁
We had it with corn on the cob from our weekly veg box and a courgette from the garden. The courgette was about to take over the world when I found it, it’s huge. I cut a large piece off and roasted it in batons with balsamic vinegar, olive oil and salt and pepper.
I really enjoyed this meal and it was very filling. We ate the whole pie 😋 Phil also had a baked potato with his!

Thank you... We're going out tonight to meet friends and they do tiny portions in the pub so phil said he had to eat more last night to make up for tonight! 😀
Ha Ha, I love Phil's analogy, that's a good excuse. I don't like huge portions but what I miss when out, I mean a restaurant, is a choice of vegetables.
Hi BoohPear, Good question...It’s not got cheese as I don’t like vegan cheese. But a “cheesey” vegan sauce can be made by making a bechamel sauce and adding the mustard and nutritional yeast as I do. (or if you like vegan cheese add some to the sauce or put some on the top). 🙂🌱
Thanks for that. I don't mind the vegan cheese if it's finely grated so I might try that in side the pie. May sprinkle on filling before pastry goes on. I know it doesn't melt successfully but finely grated might do it..I tried a vegan cheese sauce mix and to me was awful. I don't like parmesan so guess that's what it reminded me of. Love so many of your recipes, thank you 😺x
