Woo hoo I made this cake this afternoon as I had some time on my hands and wanted to bake and chill out. I got the recipe from Pinterest. The cake is delicious and it really is very chocolate and fudgy so couldn’t wait to share it. It’s really well worth making and is rich and decadent 😋 you just throw it all into the mixing bowl at the same time so no faffing around.
(I missed out the mayonnaise and used only 1 cup of coconut sugar) also I made it as a single layer cake as I didn’t want to eat that much icing! I’m going to put a few slices in the freezer for a rainy day 😁
Hi Ali. As I like very much the idea of this beautiful cake i think I'm going to try it as a version of and bake it in a square tin and cut into squares like a brownie. No frosting should maybe make it more of an everyday cake or every other day !!!! 😸x

Lol I have to admit I haven’t got as far as putting it in the freezer yet and I think that was just a fantasy idea as it’s disappearing quickly. It’s the nicest cake I’ve ever made. It really is delicious I promise and if you follow the recipe exactly you can put that Hellman’s vegan mayonnaise in it (I left it out as it seemed a bit odd) or just spoon it over the top! I know you love that mayo as much as me 😋 Ali
I did think adding mayo was a little odd to be honest, as great as hellmans I am not sure about having it in cake 😁 I would not be at all suprised if the remainder of the cake didn't see the freezer 😁 Great job Ali
I hope you do, good luck. It’s rich and delicious. You wouldn’t know it has courgettes in which has made me look into other cakes with a vegetable ingredient as this is the best vegan cake I’ve made. Ali 😁🌱👍
Cakes and baking are my favourite things😂😂. Often bake to relax but then end up eating it all lol . Hadn't thought about freezing portions, just thought it was against the law😂😂. Going to give it a go x
Haha you sounds like my kinda girl. It never did get as far as the freezer tbh 🤫 I’ve got half way through the cake and not being a quitter I think I’ll persevere 😂
