First Vegan cake made

I have a charity cake sale today for JIA (Juvenile Idiopathic Arthritis), which my granddaughter has. This is the first Vegan cake I've made.

Thank you Debs and really appreciate your kind words. I tasted the crumbs after cutting it and it did taste good. Who said you need eggs when baking.

I was really pleased with the amount, there is still a little more to come in😀

Personally I cringe when I see a cake made especially if friends/family have made one especially for me. I have as small a piece as possible, but I will have it. The fats and sugar are by definition not good for my body. But people have put in such great efforts to come to some common ground on their own journeys towards accompanying me on my own. It would be churlish to refuse, and an insult to their efforts.

But I cringe because I know these are not health foods, and every time I consume something off the health radar I will get a reaction. Probably the next morning I will feel achy and not wanting to do my early morning yoga routine. I may need to take an ibruprofen tablet to stave off that pain. The reaction will generally be gone after I have done my morning poop after my bowl of porridge.

So cakes are not for me, except to show I am part of the rest of humanity.

Funny you say that as I rarely eat cakes but have been making them for years for other people- I used to do sugarcraft i.e. wedding cakes for friends and family, I also used to make children's novelty cakes. I rarely do this now but still make them for cake sales as they are a very good money maker.

I, myself, actually prefer natural sweetener i.e. dates so eat things like raw fruit bars if I want something sweet but I am more into savoury foods and enjoy nuts.

Btw, you might want to refer your granddaughter to my alter-ego Katy, now aged 27. She has had JIA from 10 months old and has NEVER known life without pain despite every medication possible. That is, until she found the same pathway as myself, almost at the same time as myself a couple of years ago.

You may notice Katy is quite diminutive, she often gets mistaken for a teenager. This lack of growth is because of her lifetime of arthritis. The rest of her family are not small! She will never become tall, but that is almost the only remaining effect of arthritis on her. That and the countless operations including knee replacement.

It is because of how a good diet has affected people like Katy so positively in the same way as myself that I am so so passionate.

I did taste the cake crumbs and it was really good. It's unhealthy but that's not a problem as I rarely eat cake, only raw fruit bars, but it was good for the sale and it meant Vegans also bought cake.

I've just trialled peanut butter brownies which taste lovely but do tend to fall apart. I'm testing recipes for the next cake sale on 6 July for charity.😀

It’s a bit of effort to make (lots of ingredients & prepping), but it’s absolutely delicious & more ‘nutritious’ than typical cakes for those of us who must get our ‘fix’ ☺️ (or for those of us working toward ’transitioning off’ cakes, chocolates, etc.). 😋

Thank you Kai-- . Fortunately the chocolate cake was for a cake sale and not me. I get my chocolate fix from raw fruit bars I make which have cacao powder in them, I live them. I'm just raising money with the unhealthy cakes.

If unhealthy cakes raise money I'm fine with that as I don't have to eat them lol🤣
