Vegan fruit cake

I made a fruit cake today. Never really done it before and it is delicious. I just made it up as I went along hence I don’t have exact measurements.

I whisked half cup of vegan spread with a little coconut sugar.

I soaked mixed fruit in hot water, sultanas apricots, cranberries, plump prunes and chopped dates). After half an hour I Added a grated apple, about half a cup of chopped almonds, roughly 1/2 cup cacao powder and half a cup of whole meal flour.

I put the fruit mix into the butter and sugar and whisked together. I then added an orgran egg and half a teaspoon of xantham gum.

I put it into a greased loaf tin and baked for 40mins.

I had it this afternoon with a cup of tea. It’s very nice and moist.

ps .... I’m looking forward to the vegan bake-off tonight! Ali 😁

This looks fantastic Ali, a great texture and what ingredients so I'm impressed as cooking with grated apple is great. I love that its a flourless cake so tops marks from me...😊

Erm...actually it did have flour so I need to add that to the ingredients. Sorry Jerry 😔 you could use ground almonds though 😀

Ali, you make some amazing food, where you get your ideas from I'll never know amazing. Bake off was good tonight and how they made the meringues was good, loved the look of some of the tarts as well. I really liked the showstopper with the squirrel biscuits on.

Thanks Alicia! Bake off was great wasn’t it. I’m so glad that the judges embraced It and had positive things to say about vegan food as now more people may be encouraged to try it rather than thinking its a massive faff 🙂 The squirrels were fun weren’t they, she did a good job. I made a pavlova last Christmas and you honestly could not tell the difference between one with eggs and one with aquafaba.

I agree it wasn't great, the guy, can't think of his name certainly didn't want to try it but of course he ended up by leaving. I thought that a few of them did really well with the pastry made with coconut fat, that was good. I hope that more people are encouraged to try it, I've had a few people say to me 'what on earth do you find to eat' and my reply is there is loads out there. I had my favourite soup last night which is the Gut Healing Soup I make, I absolutely love it - what a creature of habit I am ;). The squirrels were really good and she really does have some imagination. I'd never heard of aquafaba until I watched the program and agree with what you have said above, you really couldn't tell the difference. I'll have to give that one a go.
