Due to crazyfitness posting her fabulous chocolate cake it made me fancy some cake. So today I made these coffee and walnut cupcakes. They were really tasty and spongy. I was pleased with how they turned out and are great for a change. I think at least if you make them yourself you know how much sugar they contain. I used a simple vegan sponge mix which is about 140g of butter, s/r flour, and sugar plus a tablespoon of orgran egg replacer mixed with water. I added plant milk to get a batter consistency. I used less sugar than 140g and I used coconut sugar instead of caster, it worked fine. I made a butter icing to put in the middle.
(I was looking at reviews of orgran and people said their cakes were too crumbly. I Make it up to a thick meringue consistency and Iโve never had a problem).

Thank you Debs, They were lovely and spongy and I just put it all in the mixer in one go. Couldnโt have been easier. Which makes me wonder why more places donโt do vegan cakes. It seems that the tea room near me no longer does vegan cakes. So annoying when it can be so easy ๐ก
Thats great Ali, a nice sweet treat thats easy to make, such a shame about the tearoom near you, maybe they just didn't sell enough of them ๐ When I was in Costa over the weekend I was trying to work out why when there is a need for heathier Vegan and GF Options that they decided to bring in these vegan packets of sweets - cola bottles etc - rather disappointing
I think places started to cater for vegans about a year ago but I honestly think some of the places have dropped off. Itโs the same with Waitrose. They have articles about their vegan aisle but try getting something vegan in their cafe! I couldnโt in London at the weekend or the one near me or John Lewis....I suppose I should be telling them not you lol....Iโll drop them an email! ๐
I think if they lowered there prices they would get more customers. We can appreciated that it needs to be dearer but they are taking it to the extreme
