The photo is not all that and I forgot to take a picture before eating some, but made this today and thought I’d share 😂
It’s an amended recipe from BBC Good Food.
140g vegan butter (I used Pure brand)
140g mix of caster sugar and dark brown sugar
140g flour
1/2tsp baking powder
Chia seed egg replacement (see below)
1tsp vanilla extract
2 mashed very ripe bananas
The recipe calls for 2 large eggs so I mixed 2 tbsp chia seeds with 4tbsp warm water. Leave for 5 minutes to set like a gel and you’re good to go!
I baked at gas mark 5 for 50 minutes.
I’m vegan and have a toddler who isn’t but who has a dairy and egg allergy so I’m looking into substitutes a lot at the moment! Chia seeds seem a good replacement for things like this, pancakes, brownies etc but don’t work well for lighter fluffier type bakes.
