I made a vegetable gratin tonight. I roasted some vegetables (red pepper, green pepper and pumpkin) and later added sweet corn and chilli’s.
I poured a white sauce I had made with homemade cashew milk, Dijon mustard and nutritional yeast over the vegetables and put sliced onion on top and a few dried herbs and baked it for a bit longer.
I served it with peas and baked sweet potato 🍠 delish 😋
