I made a vegetable gratin tonight. I roasted some vegetables (red pepper, green pepper and pumpkin) and later added sweet corn and chilli’s.
I poured a white sauce I had made with homemade cashew milk, Dijon mustard and nutritional yeast over the vegetables and put sliced onion on top and a few dried herbs and baked it for a bit longer.
I served it with peas and baked sweet potato 🍠 delish 😋

Thank you, that’s kind. I was lucky as I had a few months off work and decided to make an effort with learning how to cook nice vegan food so I didn’t have to look at recipes and had an idea of what went together so that when I cook it’s spontaneous and not a stress and it was time well spent 🙂 back at work now though 🙂🌱
That was goid that you had the time to do that and time definitely well spent. I've got to Vegan cookbooks in front of me at the moment where I will be picking recipes that don't take too long. 😀
That’s good... I think you can make tasty, healthy things that don’t take too long. Ps I’ve got a chocolate cake in the oven as we speak. Hope it works out! 😋
