Hi everyone, I made a jackfruit curry for the first time with passatta and all your usual curry spices, cumin, corriander, turmeric, black pepper and garam masala. I have recently bought Ras El Hanout which is a mixture of lots of different spices and used mainly in North African cooking but used sparingly I thought it would add something to my curry. I added lots of garlic and freshly grated ginger. The vegetables along with the jackfruit were, aubergine, peas, cauliflower and onions.
At the end I added a little coconut milk to round it off.
I really enjoyed it and with all the spices has lots of health benefits for fighting any cold virus germs that might be thinking of heading my way 🤺
I also made a hearty curry pasty for lunch tomorrow as I have a busy day working outside 👍
