I chopped up some sweet potatoes, red peppers, red onions, carrots, butternt squash and added some chopped frozen celery (I don't like celery on it's own but ok with it in a pot), chickpeas and a tin of coconut milk. I sprinkled Nutritional Yeast on top and added a myriad of herbs and spices i.e.some cumin seeds, chilli flakes, will add. I had it tonight and it was lovely.
Also, I successfully made some Soda Bread, it was really good and had a lovely crunchy crust.
