This was a favourite midweek meal pre transition which I've tried since with just rice but this time just replaced the mince with soy mince and beef stock with a red wine stock pot. Served with mini foccacia and just a sprinkle of free from mozzarella.... yum!

Looks very colourful, can I ask what rice you used please?
I used a quick cook basmati and wild, the rice is cooked with turmeric and red pepper for colour. I can post the recipe if you like?
