Today I made a vegetable bake. It was so tasty and easy if you want something you can make in advance. I served it with peas.
I put raw vegetables in the dish. (Courgette, chard, butternut squash, red onion, white onion & mushrooms) poured over a little passatta and then made a cashew creamy sauce with garlic, nutritional yeast & Dijon mustard. I was inspired by Debs and put thinly sliced potatoes on top and baked it for about an hour and twenty mins.
I think this would be a lovely autumn/winter meal and if I had done a herby crumb topping I would have served it with a baked potato which would have been more filling.

It was delish. What I liked about it was that all the ingredients were raw and then I put it in the oven and forgot about it and it cooked itself. So it felt like someone else cooked it. ππ it was like a lasagne. π
