Vegan sausages

I made sausages today. I fried onion, garlic and mushrooms. In a bowl, I mashed up cannellini beans, xantham gum, nutritional yeast, paprika, salt, pepper , tomato purée and Italian herbs. Added a tablespoon of balsamic vinegar and tamari. Combine everything together.

You have to then wrap each sausage in baking paper or foil and steam for 30 minutes. Refrigerate for a few hours and then use as required. Ie grilling, frying or baking. I haven’t got a steamer so it was a bit heath Robinson as I had to put my colander in a saucepan and put a lid on top overed by foil and a tea towel!

I grilled the sausages. They were tasty but think the overall effect would be better with a proper steamer and the sausages would have a firmer texture.

I served them with a baked potato and yellow courgette with red onion, garlic and chilli and frozen peas.🙂🐖
