I fry onion, mushroom, pre cooked potatoes, spinach or whatever is on hand.
Mix about a cup of gram flour (serves two) with warm water to get a batter consistency. I add pepper and a pinch of turmeric and a couple of tbsps Nutritional Yeast. I have made the batter quite thin before and it still works.
Remember it’s about the vegetables and not the batter so you only want to just cover them.
Pour batter over vegetables and pop under the grill.
Just before I put it under the grill I add a little black salt en.m.wikipedia.org/wiki/Kal... which is an acquired taste and has taken me a couple of attempts to get used to it but it sort of gives the taste of eggs.

Yes would make a lovely lunch. It’s particularly nice with potatoes in. Good luck. (It cooks quickly and you only need to put it under a hot grill for a minute or two).
That sounds lovely Ali, I must give that a try. I have got some gram flour in the cupboard in need of being used up. I have never seen black salt, I use pink Himalayan salt - I will keep a look out. Sounds so yummy 😀
