I made chick pea flour omelette today. I put broccoli, red onion, mushroom and fresh coriander in mine. Very nice for a change. Would also be good for little fritters during the week.
3 tablespoons chick pea flour
8 tablespoons water
Salt & pepper
A few vegetables chopped up quite small
Mix it all in and fry in a little olive oil
