Today, I experimented baking purple potatoes mini-sized bread again to get it to the purple color. ๐
What I changed was steaming purple potatoes first before purรฉe with water. I used more purple potatoes and less of flour and starch this time to see if the pigment comes through. However by doing this, it became more like a potato cake than potato bread. ๐ I used pecan instead but that has nothing to do with the purple pigment.
The best result i could come up with was a reddish hue but not purple. Now I can accept purple pigment from purple potatoes wonโt show up by baking. ๐
