Been on the Autoimmune Paleo diet (well gradually,it is difficult) for over a week now.Missing crispy rolls,sourdough,butter and nice filled sandwiches! Has anyone tried making the AIP diet flat bread? Just tried it tonight and what a disaster!

I tried a few days ago with GF flour, water, olive oil and baking powder. Mixed the ingredients then moulded and flattened into shape before gently frying. Mixture doesn't stay together as no gluten and so it's really fragile but it tasted ok. No good for sanis, as it's too crumbly but ok to put under a poached egg🙂
I was so keen to make GF bread that I bought a bread maker with a GF function. I’ve posted on the forum for advice re bread machine recipes, but I still haven’t made one I like (although all loaves for non GF family members looked great). I’ve since tried a few recipes by hand, but I’ve come to realise that (for me) quality GF bread is better bought at M&S or Waitrose (I freeze it & just take out a couple of slices as needed). Hand to hand pizza base style.Tastes of coconut too.Ok there not the real thing but very good till I master cooking them with a few tweaks.Here’s the recipe if anyone would like to try.I never added salt and just doubled the ingredients list and blended them
