A further question to those who are GF..Is "may contain traces of gluten" or "handled in an environment that also handles gluten" permissable?

I expect this is one where people’s mileage may vary! Personally, it wouldn’t bother me. I am not coeliac, though and I find GF a challenge at the best of times. That having been said I have now been solidly GF for about 2.5 weeks and I think it is definitely helping with something. Still, in my case, there are lots of other variables, such as the introduction of T3 and a concerted effort to up my vit d and iron levels, which will all be playing their part! My current best guess is that I am getting more benefit from my vitamins since going GF. I definitely have less tummy pain.
Think it depends on how you react .
For me , traces of gluten not ok but seem to be fine with’ handled in ‘
Some people have separate shelves for gluten-free at home and use different chopping boards . I just clean well .
I find I can tolerate “handled in an environment “
What I can’t tolerate, even though it’s gluten free, is wheat based glucose (found in some sweets)

Interesting, what do you mean by can't tolerate? What symptoms do you get? I don't get gut symptoms from wheat, I'm hoping to improve low thyroid symptoms.
I had zero obvious symptoms from gluten or wheat before going absolutely strictly gluten free
But I remained extremely unwell. Immobile
Strictly gluten free diet was revelation.
I am extremely careful to be strictly gluten free. Separate toaster, butter, cutting mats etc
Slightest speck of gluten gives me terrible joint pain
Larger amount gluten (eating out .....if we can remember when we use to eat out!) would cause classic gut issues
Wheat based glucose or wheat based fibre.....causes terrible joint pain (took a while to work that out)
Endoscopy showed significant damage, as if coeliac before I went gluten free

I went gluten free last April, and basically behaved as if I was coeliac. I had my adult kids at home at the time, so that meant different prep areas, different toasters, they weren't allowed to touch any of our food to prevent cross contamination etc.
They've now gone, and it is so much easier, as we've got rid of everything with gluten in. My husband went gluten free to support me (and because he's the cook in the house and decided it was easier!), and it has actually cured him of his acid reflux.
I can't say I've noticed a huge difference, although I do feel slightly better than I did. However, I'm going to stick with it, as haven't found it too much of an issue (other than when out as I'm also vegetarian, so can be a bit of a nightmare, but lets face it, we can't eat out right now anyway!) and I'm hopeful it's doing my insides some good!
