Hi does anyone split their dose?
I’m always freezing in the evenings compared to the mornings and wonder if it’s because I take Levo in the morning?

I suspect that there is a combination of too low a dose and the effect time of taking.
But, yes, time from dose to effect can be important. Though many forget (or miss) that the T3 level in our blood which comes about from our taking the levothyroxine we need, occurs about 48 hours later.
Maybe try bed-time dosing?
You are probably just a little low. Take a little more levo each day - maybe 10-20% keep an eye out for side effects like tingles in the hands of feet, heart pulps. you can break a 50mcg in halves and take the extra half every second day for a daily increase of 12.5mcg as an example

As you are on strictly gluten free diet it's important to regularly retest vitamin levels
Did you get vitamin D tested? Magnesium is often low too on GF diet and with Hashimoto's
What supplements do you currently take?

From what others say I would look first into vitamin levels etc. Getting those optimal for me made a huge difference but it can take time to get levels up especially if very low. That should increase thyroid levels but if still low then consider a dose increase.
It could be that your dose is too low... but with hypothyroidism, I find, you always feel the cold more than those who do not have this. I did not find a difference whenever I took my dose.
