There does not seem to have been that much positive vibes in the press for the humble spud - can’t compete as slow burn carb etc etc and I was one who like many was eating it less and less.Then to my great surprise this was turned on it’s head by the guidance of ray peat and I have tried over the past 6 months to take every opportunity to enjoy spuds especially when cutting back on gluten based carbs like pasta.
The more you read there really are important health benefits and I smiled today to see a link from the medical medium who also seems to support them.
