I'm on track to sorting out my medication and just a few tweaks needed (I'm in NDT).
I've made my first batch of bone broth and it seems to be okay, but I just wanted to check if anyone in here has any suggestions - in particular, the types of beef bones used. Which cuts of the cow provide the best bones? And how long do you cook for on the stove?

I use 4 raw chicken carcasses chopped into small pieces. Roast the chicken pieces int the oven on a baking tray until they're caramelised and golden brown (40mins @180). Tip into a stock pan and cover with water. Bring to a simmer on a medium heat, then turn to low so that the liquid is just shimmering- not boiling. Mash the bones down from time to time to extract the flavour, and let simmer uncovered for 3-5 hours. The more it simmers, the better the flavour. Allow to cool, sieve the bones out and tip the liquid into a container. Put in the fridge overnight; the fat will sit in a layer on the the top and can be scraped off. Will keep for a week in the fridge. You can reduce this right down if you want to; the more reduction, the more intense the flavour. Add veg and salt afterwards. You can use any bones/meat; the roasting and browning caramelises the natural sugars and adds lots of flavour.
Put a teaspoon of either lemon juice or cider vinegar in the broth while it is cooking to help leech the minerals from the bones. Always use organic, grass fed beef, or organic chicken. Helmsley & Helmsley have a good recipe.
II simmer mine for 24 hrs! That's what the recipe said. A good local butcher will give you the best bones. I remove the fat and gunk from the top after cooling ( some people don't) and I was also advised never to use a microwave to heat it. I add a few carrots, leaks etc and some sage
I have done it both in a slow cooker and a pan for 24 hours, I've had to add water obviously in that time. I haven't done it for a while I need to do some and get the freezer stocked up. I feel like I'm getting so much goodness when I drink it but not sure if its pointless because I didn't do the actual bone broth diet. Not very good at any kind of diet!
