Hi I have all the symptoms of Hyperthyroidism but my Doc says I am not.
My latest bloods/levels are:
TSH: 1.77 mIU/L
T4: 9.80 pmol/L
Any advise would be much appreciated

You are not hyperthyroid (over active) but I would need to see the FT4 lab ref range (the figures in brackets after FT4 result) to advise whether or not you are hypothyroid (under active).

TSH was 1.59 last year (now 1.77). Also last year bloods show:
FT3 - 4.7
FT4 - 11.5
I have been told my parathyroid (PTH) is fluctuating
Last year it was 7.1 now it is 1.1. I am taking vitamin D 1000IU Daily.
Does tHis make sense?

If your parathyroid level is fluctuating, has GP also checked your calcium levels. PTH, calcium and Vitamin D all need testing together and comparing with each other to determine why and what sort of parathyroid problem you might have

Secondary Hyperparathyroidism can be due to undiagnosed gluten intolerance or coeliacs causing low vitamin D / low calcium due to poor absorption.
Silent coeliacs - is gluten intolerance with no symptoms.
Low vitamin D can give similar symptoms to hypothyroid
You are more likely to be hypo than hyper with those results (secondary or central) but you really need to give ranges and get free T3 done. Do you know your ferritin, folate, B12 and D3?
