Gluten (from Latin gluten, "glue") is a protein composite found in foods processed from wheat and related grain species, including barley and rye.

Allergies and sensitivities are usually caused by proteins and we eat a lot of wheat for the most part so it is common to become sensitized. It is also the stickiest substance there is.

Am I the only one that remembers making glue from flour & water? (goes mouldy 'tho!) :D

Oh, yes. I used to love paper mache. Come to think of it, it's probably the best use of white flour rather than eating.

Maggie listed many of them below. Anything made from flour. It is also hidden in some sauces. There are just a few grains without gluten, i.e. buckwheat, millet, quinoa, but people tend to go to rice products or soy to avoid wheat but I do not think soy is recommended.

It is the basic foods of bread, biscuits, cakes and pasta. But it is also in gravy mixes, sausages, bread crumbed foods etc. I suggest you look at the coeliac UK website. Even if you're not coeliac but wish to avoid gluten it can give you plenty of info. Good luck

Processed stuff, the problem being that there is 5x more gluten in bread now (for example) in order to make the process quicker, I think. Quite easy to avoid really, just cook meat/veg from scratch & use cornflour if you want sauce/gravy. (or Doves farm if you bake). Gluten is inflammatory - I just join in as hubby suffers. (he finds oats & rye OK 'tho) J :D
