Interesting article in todays NY Times. A study has shown that if carbs such as pasta, white rice and white potatoes are cooled down overnight in the refrigerator they become more resistant to quickly breaking down into sugar. This helps to prevent spiking blood sugars and also it results in better gut health and less inflammation. Good to know though I’ve switched from white flour pasta to Jovial brand brown rice pasta.

As convenience I make steel cut oatmeal, brown and black rice mixed, and sweet potatoes all ahead of time as use it as I need it.

. . . this, already well-known issue - & based on it, prompts to make toast from FROZEN bread slices, etc - are likely to be substantially INSIGNIFICANT to the 100s of millions* on the 'HI' fueling western diets !

In short, to match with the thread title, 'carbs' fuel HI, . . . more than protein, . . . & ( - least of all the 'macros') fats, as a generalisation !

For a decent intro to 'HI', how it happens, is fuelled, & how to reduced it (easily enuf!) s👀 the ytbe vid: The Bittersweet Truth, by Dr P Jamnadas; you'll be glad you did ! 😉 😀 😉

. . . but reducing HI may hv N⛔ effect on existing RLS - that may tho' be helped by checking & improving/addressing any B12 deficiency: see for example the 'B12 deficiency calculator' at b12d.org ! 😊 In the worst cases, . . . B12 💉s may be required . . . - & more frequently than usually available on the NHS, here in the UK! 😨❓

(* - a woeful underestimate, . . . surely ! 🤯❓❗).
